The Origins
It was 1984 when we first opened the shutters of our shop in Locorotondo. Grandfather chose the meat by hand, directly from Puglia's breeders. There were no catalogues, no marketing — just the trust a customer placed in a butcher who knew his name, his plot of land, his family. That respect has never been lost. It has only been passed down.
Today
From the small shop of our beginnings we have become a benchmark for quality meat in central Puglia. Today we source from more than 20 farms, dry-age in temperature-controlled rooms to guarantee the highest excellence, and keep the direct relationship with our breeders alive. The counter is always open, advice is always available, and every cut carries forty years of respect for the raw material.

Tomorrow
Tomorrow is not an abstract idea, it is the next piece we cut, the next customer we introduce to true Apulian meat. We are building a broader experience — gourmet hampers, tasting evenings, ready-to-cook products delivered to your home. Our goal is to make I Piaceri della Carne a benchmark for anyone who loves real meat — crafted with the fire, the patience and the respect our family has always honoured.

Farms of the Itria Valley
Every piece of meat that passes through our counter has a precise origin. We work with 20 farms in the Itria Valley, breeders we know by name and visit regularly. 100% Apulian meat, traced from birth, raised with timing and feed that respect the animal. Short supply chain is not a slogan for us — it's how we have always worked.

The story
In the heart of the Itria Valley, C. & L. Carni was born from Francesco Convertini's passion for quality meat. The butcher shop, overlooking the trulli of Locorotondo, is the starting point of a short, controlled supply chain: the pig is selected, the cut worked, and the curing follows the rules of the Slow Food Presidium of Capocollo di Martina Franca.
The philosophy
No shortcuts: slow timing, fig vincotto, smoking with fragno wood from the Mediterranean scrub. Here the capocollo remains a seasonal product, made in limited quantities, recognisable for its balance between fat and lean and for the sweet aroma of the cellar.
